Owners Mary Allison Wright and McLain Hedges, most recently nominated for “Outstanding Professionals in Cocktail Service” by the James Beard Foundation Awards, will be stepping behind the bar at Starlite to make their most beloved cocktails. The two music industry veterans turned hospitality professionals opened Yacht Bar, “part progressive cocktail bar, part natural wine bar, and everyone’s favorite dive bar,” in Denver to much acclaim in 2021. Since then, their service and cocktails alike have been celebrated globally by the Tales of the Cocktail Spirited Awards and North America’s 50 Best Bars.
